How thick is the insulation on top of the oven?
The PINNACOLO Oven dome consists of double-wall construction and has compressed ceramic fiber insulation between the stainless walls. The material is rated to 1400 degrees F. The thickness after being compressed is about 2” from what would an equivalent to an initial 6”. The insulation is designed to assist in retaining the heat inside the cooking dome.

Can you cook bread in the Pinnacola Premio wood fired pizza oven? If so, what types of bread can be baked? Do you have to remove the ashes and embers before baking the bread?
Of course, you can bake any type of bread in this oven. The secret to making the perfect bread is in the temperature of your oven. You have to maintain a low and consistent temperature for bread baking. And yes, you will need to dispose of any embers when baking bread. Is your Premio available in a counter top model?
No, we only have the portable version of the Premio. No countertop version yet as of writing
Can the chimney be extended and can it be extended through the roof eaves?
If you wish to extend the height of the chimney of this pizza oven, you definitely can. Just make sure it is not anywhere near combustible materials. However, we don't sell the chimney extension part.
