Restaurants love the hybrid feature for its flexibility, ease of getting the fire started, and minimizing the amount of wood needed to cook.  Inspectors are happy to see the commercial certifications!

Hybrid Burner System

Using TWO gas burners (ambient & hearth), this isn’t just an oven - it is a gateway to a new type of backyard experience and lasting, cherished memories. You’ll take entertaining and mealtimes to a new level with this Chicago Brick Oven. Made in the USA, the CBO-750 offers the high heat of the signature FlameRoll - the best way to get the true wood-fired taste.

Whether it is for your backyard or the patio of your restaurant, this hybrid wood-burning oven is designed to reach temperatures as high as 1000°F.  Using gas only, the oven will maintain temperatures at 650°F and attain temperatures as high as 1000°F when adding wood.  How? The proprietary low dome design, flue system, and refractory materials create the exclusive FlameRoll. Not only will you get an authentic taste, but it also looks amazing at night!

The Infra-Red Burner below the hearth is thermostatically controlled.  This means that if you add wood causing the floor to get hotter, the burner will cut off when the floor temperature reaches 650°F as its no longer needed.  If the floor cools under 650°F, the burner will come back on.  This gives you a base of heat that you can always count on even if the wood temperature cools.

I think we've finally started to master the process with bread!

I think we've finally started to master the process with bread! After talking with your company, I started misting the oven just before/after loading in the bread. That made a huge difference in crust development!

QUESTIONS & ANSWERS

Ask a Question
  • What's the heating time of stainless steel and brick ovens?

Stainless steel pizza ovens will heat faster but they won't stay hot as long. Brick ovens take longer to completely heat but the heat will be retained in the oven for much longer cooking times.

  • What are the features of Chicago Brick Ovens?

These ovens are certified to UL and NSF4 Standards for safe indoor/outdoor installations. They have a proprietary low dome design and flue system which creates a dynamic Flame roll - not only does it look great but it generates temps as high as 1000 degrees for true wood-fired taste. You can purchase the base kit and then customize using your own design. We also have many celebrities using the CBO ovens such as Guy Fieri, Rachael Ray, and Iron Chef Restaurateurs, Edward Lee and Tim Love.

  • Can the CBO-750 hybrid model use gas and wood at the same time?

Yes, the hybrid is a gas model but you can put small pieces of wood in it as well for the wood flavoring.

  • What's the advantage of the Chicago Brick Oven hybrid model?

The hybrid model uses both gas and wood. The main advantage of the hybrid is that you can turn it on and heat the oven quicker.

  • Where do the Chicago Brick Pizza ovens ship from?

These ovens are manufactured and ship from Chicago.

  • Would this oven be able to be used in a food truck?

    Yes, you can! :)
We have a blog post on How To Start A Food Truck and you can check it out here: https://www.patioandpizza.com/blogs/resources/food-truck-vs-food-trailer

  • On the hybrid oven can you sometimes use gas and other times use wood or is it a gas oven that simulates wood

Yes, you can definitely use gas on some days or cooking wood on other days if you feel like it. You can also throw in small pieces of wood when using the gas burner for that flavored smoky taste.

  • On the CBO 750 do you use both the wood and the gas each time? Or can you do just wood? Or just gas? Depending on your mood.

It does depend on your mood! :-)  You can use gas only because the CBO-750 Hybrid oven includes a two burner gas system.  One ambient burner is in the back of the pizza oven and one infrared burner is under the oven hearth to keep the floor hot.  Some people do like to use wood as well for the wood-fired flavors.  You can use the back gas burner to help ignite your wood or use only wood for heating the CBO-750 Hybrid oven.  Either way, you can enjoy pizzas and wood-fired cooking whenever you are ready!
