Pre-Assembled Gas/Wood Combination Oven The Cafe-PAG(W) Features:

- The thick cast refractory body and insulated outer shell provide exceptional heat retention, ensuring even, long-lasting temperatures for perfectly consistent cooking.
- Built to last with its high-temperature refractory material with 80% alumina content, resistant to acids from wood combustion.
- The Cafe-PAG(W) features a 35" interior cooking diameter.
The Cafe-PAG(W) offers the same specifications as Earthstone's Model-90-PA, the next size up, but in a more compact design that fits into tight spaces. Its space-saving build makes it an excellent addition for filling an empty wall or enhancing a nearly complete kitchen setup.

Certified for indoor and outdoor use
Unlike most ovens that can only be safely be operated in well-ventilated outdoor areas, the Earthstone Cafe-PAG(W) has been certified by independent safety testing organizations.
- The Cafe-PAG(W) Gas and Gas/Wood-Fired Oven is U.L. Listed for installation with just a 1-inch clearance to combustible materials.
- Between the cast oven body and steel outer enclosure is a hardened lightweight insulation mixture (4 to 20 inches thick), which forms a secondary molded body. Our thick cast refractory body and outer insulation shell maximizes the thermal mass (heat storage) capacity of the oven which allows for an extremely efficient oven that cooks at even nonfluctuating temperatures.
- The hearth floor tiles, "Pierre de Boulanger" (Baker Tiles) are the same as those used in industrial bread baking ovens all acroos Europe. They are cold-pressed at 8,500 PSI and ceramitized at 2,800 degrees which produce an extremely durable cooking surface.

- The temperature probe is placed 3.5" into the dome or top of the oven (not the floor) to prevent inaccurate readings caused by food placement. Efficient temperature control all the way!
- Both the body pieces and floor tiles are cast assembled individually which allows for continuous joints throughout the entire oven. This greatly reduces the possibility of stress cracks due to normal heat expansion and contraction. In addition, this allows the oven to be serviceable and extends their usable life.

The Cafe-PAG(W) was designed by Earthstone to truly be the best of both worlds, whether it comes to its installation location or the fuel used to cook up your dishes. The Earthstone Cafe-PAG(W) can operate in three cooking modes (wood, wood-gas hybrid, gas) letting you decide how you want to cook on the spot. The hybrid wood and gas mode brings you the rapid heating and consistency of gas, while also allowing you to impart rich, smoky wood-burned notes to what’s in your indoor pizza oven.

* The heavy-duty gas burner system is engineered for optimum performance and long-term reliable operation through a straightforward design and the use of high-quality components. Earthstone Limited Warranty
The complete Warranty is further subject to the following qualifications:
- The oven must be installed in accordance with EarthStone Ovens installation instructions and local building codes
- Moisture can cause significant damage to the oven/hearth. Therefore, the enclosure/shroud (stone, brick, stucco, etc.) that surrounds the oven/hearth must be sealed and waterproof. Failure to do so will void this warranty.
- The oven is subjected to normal use, including burning such natural wood fuels as non-treated wood. Fuel products with abnormal burning characteristics including, but not limited to, fuel such as driftwood, coal or plywood and wood products using a binder, may burn at excessive temperatures and may cause damage to the oven or may cause damage to the oven or may cause it to function improperly. EarthStone Ovens does not warrant the oven when such fuels have been used.
